2012 Wine Spectator Award of Excellence Celebrated At Tender Steak

TENDER Steak & Seafood at Luxor Hotel and Casino will celebrate its 2012 Wine Spectator Award of Excellence award with a special prix fixe dinner menu featuring expertly chosen wine pairings to complement the tantalizing cuisine. The four course menu will be available for $95 per person from Monday, Sept. 17 through Sunday, Sept. 23.

For the fourth year in a row, the restaurant has received the prestigious award based on its vast selection of half bottles, including more than 100 wines from around the world and an array of unique labels. TENDER Steak & Seafood restaurant will be featured in Wine Spectator’s Aug. 31 issue, which is currently on newsstands nationwide.

The prix fixe menu will feature two appetizer courses, an entrée tasting trio and a trio of dessert selections along with wine pairings for each course. Guests will begin the celebratory meal with Wild Alaskan Halibut White Cioppino complete with steamed clams, mussels and crab in a white wine fish broth made with fennel, leeks, roasted garlic and sea asparagus.

The seafood appetizer will be paired with a 2010 Maso Canali Pinot Grigio from Italy. The Heirloom Tomato Soup will follow made with roasted wild boar loin and aged bandich cheddar cheese over organic Peruvian quinoa and corn pilaf. A 2009 MacMurray Ranch Pinot Noir from Sonoma will be paired with the savory soup.

Diners will begin the entrée tasting trio with an Omaha Black Angus Beef Tenderloin Medallion accompanied by an asparagus and baby green bean salad, complemented by a 2009 Louis M. Martini Cabernet Sauvignon from Napa Valley. The second dish is an Oregon Lamb Porterhouse with braised organic sea island red peas that will be served with a 2010 Alamos Seleccion Malbec from Argentina.

Guests also will enjoy a New Zealand Range-Fed Braised Yankee Pot Roast served with heirloom roasted fingerling potatoes and baby root vegetables, accompanied by a 2009 Las Rocas Garnacha Viñas Viejas from Spain.

The decadent Tender Dessert Tasting Trio will include Roasted Apple Crème Brulee, Mixed Berry Shortcake and Mango Sorbet. The dessert selections will be paired with a sweet wine from Italy, Lamarca Prosseco.
