Ring In The New Year 2013 With A Lavish Sugar Factory Prix Fixe Menu

Guests can celebrate the arrival of the New Year at Sugar Factory American Brasserie inside Paris Las Vegas on Monday, Dec. 31, with a specially made, four-course menu by Executive Chef, Michael Piekarski.

The delectable spread for New Year’s Eve will begin with a buffalo chicken croquette, mixed with goat cheese béchamel, fried with a ghost chili butter sauce. The second course will include Merus Crab Salad complete with avocado, frisee, radish, red onion and mango emulsion, as well as truffle ravioli topped with chanterelle puree, marcona almond, ricotta and pomegranate molasses.

The main course will feature Burgundy Braised Short Ribs and Grilled Shrimp topped with braising jus alongside crushed confit fingerling potatoes and orange glazed carrots. For dessert, guests will enjoy a chocolate torte with raspberry, vanilla bourbon anglaise and hazelnut brittle. The extravagant dinner will also offer guests a glass of champagne to celebrate the occasion.

Sugar Factory’s New Year’s Eve prix fixe menu will be available at two different dining locations within the venue: dinner in the dining room will be priced at $150, while outdoor seating on the patio with breathtaking views of the Bellagio fountains will be priced at $250.

This celebratory menu will be served at 7:30 p.m. and 9:30 p.m. Sugar Factory’s standard menu and seating will proceed after midnight to continue the festivities.
