Center Cut Steakhouse Restaurant Is Now Open at Flamingo Las Vegas

Center Cut Steakhouse is the newest restaurant at Flamingo Las Vegas, now open from 5:30 to 10:30 p.m. nightly. Following suit as one of the resort’s many latest additions, including the opening of Margaritaville Casino at the Flamingo in October 2011, the recently renovated FAB rooms that opened in January and the high-energy Mexican hotspot Carlos’n Charlie’s set to open this spring, the steakhouse offers guests a brand new, contemporary dining experience at the quintessential Las Vegas resort.

Center Cut Steakhouse features a large, stylish bar and lounge area offering a selection of specialty martinis in addition to classic cocktails, mixed drinks and wines by the glass.  The bar is open from noon to midnight daily with happy hour Sunday through Thursday from 4 p.m. to midnight.

The lengthy happy hour features 2-for-1 martinis and a specialty tapas menu. Guests can indulge in a variety of creative libations including the pomegranate lemon martini, a cool and refreshing cucumber martini or the Cut Diablo cocktail, made with tequila, orange juice, mint leaves, a splash of soda and garnished with a jalapeño stuffed with orange.

For dinner, guests can warm up their palate with appetizers such as the delicious lamb riblettes or the trio bacon satay that includes cayenne-peppered, bleu cheese-cured, natural Applewood bacon served atop a pink Himalayan salt rock. The menu also features steakhouse favorites such as the 20-ounce rib-eye, the 24-ounce porterhouse and the 28-ounce Tomahawk on the stone, made with all-natural premium beef sourced from Aspen Ridge Farms in Colorado. The “center cuts” are 100 percent hormone- and steroid-free, made with beef from cows born and raised solely in the United States.

In addition to mouth-watering steaks and impressive appetizer presentations, exquisitely prepared entrées include the pan-seared Scottish salmon with warm black truffle champagne vinaigrette, Alaskan king crab legs, free-range lemon thyme chicken breast and rack of lamb.  The experience is not complete without trying one of the delightful desserts like the caramel apple cheesecake served with an actual caramel apple, 18-layer chocolate mousse cake or the housemade gelato and sorbet.

Located across from the Flamingo Wildlife Habitat and adjacent to Tropical Breeze Café, the venue accommodates up to 172 guests including the bar, lounge, restaurant and private dining room. The black and white décor with pink accents provides a classic Vegas atmosphere while several plasma screens throughout the Las Vegas restaurant showcase photo montages from the 1940’s to present day.
