Tableau Announced New Exec Chef Joseph Leibowitz From Stratta At Wynn

The new executive chef of Tableau has been announced as Joseph Leibowitz. The fine dining destination located within Wynn Las Vegas’ exclusive Forbes Five-Star, AAA Five-Diamond Tower Suites.

Since arriving at Tableau, Leibowitz has personalized the menu, drawing upon influences throughout his thirteen year career to create modern twists on traditional American dishes. Prior to taking the helm at Tableau, Leibowitz worked as chef de cuisine at Stratta at Wynn Las Vegas.

“It is an exciting opportunity to be able to put some of my own touches and introduce new items to the menu at Tableau,” said Leibowitz. “Tableau has been a long-time favorite for breakfast and lunch among our guests and I look forward to being able to take their dining experience to the next level with some of my new dishes.”

Over the coming weeks, Leibowitz will be debuting new dishes on both Tableau’s breakfast and lunch menus. New breakfast options will include a poached egg and potato hash napoleon with avocado, tomato confit, jumbo lump crab meat and a citrus hollandaise, as well as griddled buttermilk pancakes with caramelized bananas with candied pecans, a bourbon maple syrup and finished with a spiced whipped cream.

The new lunch menu will include an oven-roasted pork shoulder sandwich, served on fresh ciabatta with prosciutto di Parma, aged-provolone cheese, house-roasted marinated peppers, arugula, Dijon aioli and a warm olive oil potato salad, as well as a pan-roasted black bass with petite herb salad, charred lemon and a caviar crème friache.

A native New Yorker, Leibowitz trained at the New York Institute of Technology, where he received an Associate’s degree in culinary arts. Upon graduation, Leibowitz worked as sous chef at The Bellport in New York City and also at the famed Tavern on The Green prior to relocating to Las Vegas to join the team at Wynn. At Wynn, Leibowitz brought his skills to the kitchen of ALEX, the resort’s two Michelin starred French restaurant, working as executive sous chef alongside executive chef Alex Stratta , for more than six years.
